Initially I am interested only in the number of seats available in each of the church buildings in 1851, unless there is data from an earlier source.

The 1851 religious census is the only national source of data on the accommodation of places of worship, although you will find sources for specific denominations and particular localities. If you literally want seating information at the individual place of worship level, you will need to consult the manuscript schedules for the 1851 religious census; these are preserved, for England and Wales only (those for Scotland are lost) in The National Archives as HO 129, but digital facsimiles for most areas have also been made available online. If your need will be met by aggregated data, then the official report on the religious census in House of Commons Sessional Papers, 1852-53, vol. 89 will suffice.
